Banana Madeleines and Banana Cake



It is a cool and cloudy today ... What's better than staying at home and do some homemade baking? The sweet smile coming from the oven is irresistible. As I have 2 very ripe bananas at home, so I decided to make some banana madeleines and banana cake for tea. Again, I used 1 recipe and made 3 different products: banana madeleines, a mini banana cake and a mini banana, sultana & walnut cake.


 Creaming the sugar and butter, mixing the eggs with mashed banana and vanilla extract, the cake batter 



Ingredients

125 g butter
150 g sugar
2 eggs
2 large bananas (mashed)
1 teaspoon vanilla extract
3 teaspoons baking powder
220 g flour 
3 tablespoons sultanas
3 tablespoons walnuts (chopped)


Method
  1. Grease 2 mini loaf tins and a 12 holes madeleines pan and preheat oven to 170°C
  2. Cream butter and sugar
  3. Mix eggs, mashed bananas and vanilla extract then fold into the creamed butter and sugar
  4. Sift flour and baking powder into the banana mixture and lightly fold in the dry ingredients into the banana mixture
  5. Spoon into cake pans
  6. For the mini banana cake with sultanas and walnut, fold in the sultanas and walnuts into 1/3 of the batter befotre spoon into the loaf pan. Bake for 30 - 40 minutes and remove cakes from pans and cool on a wire rack
  7. For madeleines, let the batter to stand on the pan for 45 mins before going in to the oven. Bake for 10 - 12 mins and stand in pan for another 5 mins before removing them and cool on a wire rack
